Hello everyone, because breakfast is the most important meal of the day, so in this blog I will give you 4 healthy great scrambled eggs ideas, they are quick and easy, and they are all absolutely full of flavor and well worth taking a few extra minutes to make a nice hot breakfast in the morning.
They start their day with these amazing herbs, goat cheese and scrambled eggs on toast, so let's start.
1- Eggs with goat cheese and herbs.
Ingredients:
- 4 eggs.
- A couple tablespoons of milk.
- Some butter oil.
- Some crumbled goat cheese.
- Chopped parsley.
- Chopped basil.
- Chopped chives.
- Some salt.
- Some pepper.
Preparation:
- In my first recipe, I'm going to be using four eggs, but of course you can use more, if you are feeding a larger family, or just really enjoy scrambled eggs.
- In a bowl, break eggs and add the milk, you can skip the milk in this recipe and replace it with a little bit of water, if you want to the liquid just helps make for a nice light fluffy scrambled egg, it's opposed to something that's a little bit more dense so I definitely recommend it.
- Whisk the eggs until all mixed up.
- We're gonna go ahead to the stove so I've got a nice nonstick frying pan heating up over medium heat, to that I'm going to add some butter, if you want to do this with a little splash of oil instead you totally can.
- Once my butter is nice and melted I am going to get my eggs straight into the pan.
- Basically, the most important thing to remember when you're cooking scrambled eggs is to keep them moving, that's the scrambled part I like doing this with a silicon spatula, of course because it prevented me from scratching my nonstick skillet and all I like to do is just keep stirring it until the egg curds start to form.
- Once the eggs are about half set in the pan, it's time to add the rest of ingredients. Add some crumbled goat cheese, if you're not a goat cheese fan you could always swap in some cream cheese.
- Add some fresh herbs, some chopped parsley, chopped basil as well as some chopped chives.
- Season them with some salt and some pepper and let them cook up for another minute or so just until my eggs are completely set.
The first recipe is ready to be enjoyed, I like serving them up on some sourdough toast, with a side of fresh fruit I honestly think this makes the perfect breakfast of champions.

2- Asian-inspired scrambled eggs.
Ingredients:
- 4 eggs.
- Some butter.
- Some green onion.
- Some chili garlic sauce.
- A splash of soy sauce.
- Some sesame seeds.
Preparation:
- Start once again with a nonstick skillet on the stove, and melt some butter.
- Once the butter is melted, add some green onion to the pan and cook it up for 30 seconds to a minute, or just until it turns a really bright green.
- Get the egg mixture into the pan, once again it's that same mixture for eggs and a splash of milk.
- When the eggs start to set add some chili garlic sauce and just a splash of soy sauce, remember with soy sauce a little bit goes a long way so you really don't need too much.
The second recipe is ready, just serve it topped with even more green onion and some sesame seeds.
As the perfect side, try a bit of sauteed kale with some garlic,super tasty, super nutritious.
3- Mexican inspired scrambled eggs.
Ingredients:
- 4 eggs.
- Some butter.
- Some onion.
- Some minced jalapeno.
- Some minced garlic.
- Some finely shredded cheddar cheese.
- Some freshly chopped cilantro.
Preparation:
- Start once again with some butter heating up in a nonstick skillet on the stove.
- When the butter melt and become hot, add some onion into the pan and cook it for two to three minutes until it's nice and soft and translucent.
- Then add some minced jalapeno, and some minced garlic, (if you're not a fan of the heat you can always leave the jalapeno out in this recipe), but I think it adds a ton of really wonderful flavor.
- Cook up the ingredients for another 30 seconds.
- Now, get your egg mixture into the pan, and keep it until the eggs start to set.
- At this point, it is time to add the rest of my ingredients, add some finely shredded cheddar cheese, some freshly chopped cilantro.
Now you guys just know these scrambled eggs are delicious all on their own, but if you want to take them right over the top, I highly recommend you load them on some tostada shells with some smashed avocado, a little bit of sour cream, pickled red onion, sliced jalapeno, maybe some fresh cilantro.
4- Italian sausage scrambled eggs.
Ingredients:
- 4 eggs.
- Some hot Italian sausage.
- Oil.
- A little bit of the fat.
- Some chopped baby spinach.
- Some chopped roasted red peppers.
- a little bit of Italian seasoning.
- Some salt and pepper.
- Grated Parmesan cheese.
Preparation:
- Put a little bit of oil into the skillet, so in this recipe i used some oil instead of some butter just to cook up the sausage.
- As soon as the oil is nice and hot, get the sausage in, and I'm going to let it cook up until it is no longer pink.
- Once the sausage is fully cooked, you have the option to leave it just as it is or to drain some of the fat, I prefer to drain a little bit of the fat to keep this on the lighter side. Now add some chopped baby spinach, some chopped roasted red peppers, (I love adding these to this recipe because you've got that salty Italian sausage mixed with those sweet red peppers it's such a beautiful balance).
- As soon as the ingredients are heated, use spatula to push them all over to one side of the pan.
- On the other side of the pan, scramble up the eggs of course once my eggs hit the pan, I want to keep them moving but first I'm gonna season them up with a little bit of Italian seasoning, some salt, and pepper.
- As soon as the eggs are set, mix all ingredients in the pan together.
- Turn the heat off completely, and finish this off with a little bit of grated Parmesan cheese.
