Easy Healthy Chicken Piccata Recipe

This healthy and simple chicken piccata recipe is very tasty with roasted lemon and garlic, this is the absolute keeper's perfect italian chicken recipe.

Easy, healthy, Chicken Piccata.


  • 4 chicken breasts.
  • 1/2 cup flour.
  • 3 tb extra virgin olive oil.
  • 1/2 cup minced onion.
  • 8 garlic cloves.
  • 2 tb fresh lemon juice (about 1 large lemon).
  • 1 lemon, thinly sliced.
  • ​​ 1/2 cup plain chicken stock.
  • 1 tb capers, drained.
  • Salted butter.
  • 1 tb  kosher salt + freshly ground pepper to taste.
  • optional side dishes: freshly ground parsley.


  1. Place chicken breast on cutting board and cover with plastic wrap, grind to an even thickness, use a paper towel to remove excess moisture from the chicken. 
  2. Sprinkle a thin layer of kosher salt and freshly ground black pepper on each side of each chicken.
  3. Put the flour in a shallow bowl, dip each piece of chicken in flour and shake off the excess.
  4. Heat 2 tb of olive oil in a very large skillet over medium heat until the oil is hot.
  5. Add chicken to frying pan (batch if necessary to avoid overfilling).
  6. Cook for 23 minutes, until both sides or the center are no longer pink, don't overcook it.
  7. Using tongs, transfer the chicken to a separate plate warm.
  8. Without emptying the frying pan, place 1 tb of olive oil in the same frying pan over medium heat, when the oil is hot, add the onion and garlic and stir for 12 minutes until fragrant.
  9. Add lemon juice and lemon slices and, if necessary, scrape the pan to loosen the brown slices. Cook until the lemon slices are slightly browned.
  10. Add broth, capers and butter, stirring occasionally, until the butter is melted. Pour the lemon mixture over the chicken and serve.
  11. Garnish with fresh chopped parsley, if desired.


Piccata and capers are used together, but feel free to switch to capers if the eater (or you!) doesn't like capers. Even if you omit it, it's still delicious.

Serve this for 15 minutes with alio e olio spaghetti or garlic and rosemary bread.
